What’s been going on?! I missed a day of blogging. Yesterday I felt uninspired to write a post for some reason. I had no pics and no words. I had a bunch of little things to check off my ‘to-do’ list so I felt slightly preoccupied.
Today I woke up with a little more clarity. I feel like I can put together a semi coherent post
I’m currently enjoying a green juice in our new green cups with our new reusable straws.
Since this whole juice thing is sticking (we didn’t just do it for a month and give up) I decided we better figure out a better way to make this habit more environmentally friendly and also find a way to drink them out of BPA-free cups. Enter these cute cups I found at Whole Foods and these stainless steel straws
. The cups are great although kind of flimsy. I’m not sure how long they will last but it has got to be cheaper than buying red solo cups. The stainless steel straws I found on this open sky shop. They are a tiny added hassle because I have to clean them out but it’s worth it!
Workouts
Yesterday I did my first Brick workout! BIG DEAL!
My understanding of a Brick is: doing two triathlon events back to back during training (swim/bike, bike/run…ect). Is that right?
This was pretty cool and something I’ve been wanting to do for awhile. I swam at the gym for 25 mins then got into my running clothes and sneakers and headed out for a 4 mile run. I’m still so bad at swimming. There was an older man in my lane and before I got in I was like, oh he’s going painfully slow that’s so sad. Well guess what? I was slower! I guess I’ll just keep plugging along…just keep swimming! The run was slow and hot but glorious. Afterwards I felt wrecked and exhausted. I can’t wait to play around with different speeds and distances as I get more comfortable with doing this.
Eats
Last night I made a Tofu Recipe from Daily Garnish. I didn’t have all the ingredients listed but I did the best I could with what I had.
The main event of last night’s meal was the corn (obviously). At Whole Foods last weekend I found this little gem:
Truffle Salt? I’m not sure I mentioned this on the blog before but I LOVE TRUFFLE. Whenever I go to a restaurant I’ll order anything with truffle. At our wedding we had truffle mac n’ cheese…i just love it.
So I lightly buttered the ears of corn, sprinkled truffle salt and fresh ground black pepper on top and roasted at 400 degrees for 25 mins. When they came out I sprinkled more truffle salt and a little shredded mozz on top. So sweet so delish.
On the side we just had a simple salad.
After dinner I met up with some friends for Yogurtology :)
They have a newish flavor there called lemon drop. If it’s something I love almost as much as truffle it’s lemon. Like, lemon squares are one of my favorite desserts. So you know I filled this cup up with lemon drop fro yo. I also added chocolate/graham cracker/coconut to the mix.
It was nice to get out of the apartment during the week and catch up with friends
Bachelorette
I missed my bachelorette recap…what did you guys think of the episode? This season is breaking my heart! I feel bad for Emily and I feel bad for the guys. They all seem so in love with her! I’m looking forward to the Guys Tell All so we can see how they are doing now.
The last two guys she has would totally have been my pick from the beginning! It’s crazy how good of a job she did at picking the guys this season. The last two are so sweet and really love her. I think she is going to end up with Arie but I am all about team Jef!
I also think it’s weird that these guys are going to propose without having spent any time with Ricky. Do you think that’s weird?

Ahh, I want to try juicing! What juicer do you and or could you recommend? And then I guess I will need recipes! I see so many people juicing and definitely want to give it a try
Juicing has done amazing things for my complexion, mood, energy levels…ect. The more I juice the better but it gets kind of pricey so I just drink a juice every morning with my breakfast
Watch the documentary ‘Sick Fat and Nearly Dead’ and you’ll be hooked on the idea of juicing! I bought a book at Barnes and Noble with tons of recipes. I found three that I love and I usually just make one of the three (so I know what to get at the grocery store..ect.)…

YUM! How was the truffle salt?? I feel the same way about truffle oil and had the most amazing pizza w/ it on top on my trip to Austin last week.. still dreaming about it!
Truffle and pizza sounds like awesomeness! I think I’ll have to buy pizza dough from Publix and put truffle oil on it

That juice looks amazing. I need to get a juicer. I have only done the green smoothies.
Oh, I am so with you on the truffle salt. My boyfriend got me some last Christmas as a stocking stuffer and it is AMAZING.
